How to make sticky orange jam for Tet

Each slice of flexible orange has a clear yellow light, and the sweet and sour taste is intertwined to create a very unique aftertaste.


  • 2 yellow oranges (about 350 g)
  • 300 gr white granulated sugar
  • 2 teaspoons granulated salt (soak the oranges)


Oranges are washed, blanched in hot water for 1-2 minutes, taken out and soaked in cold water with diluted salt for 15-20 minutes, then washed. The purpose of blanching and soaking in brine to reduce the essential oil in the peel helps the marmalade not to be bitter and ensures the removal of dirt.

Cut the oranges into even slices about 0.6 – 0.7 cm thick.
Place a layer of oranges in a bowl, spread a layer of sugar, and do it in turn. Coat a layer of sugar on top. Add the remaining orange juice when cutting (if any).
Leave to marinate for 6-8 hours for the sugar to melt, the oranges become succulent, darker in color.
Place the oranges and sugar mixture in a saucepan over medium heat, turning gently occasionally. You should not stir too much to avoid breaking the orange slices.
When you see that the sugar water is almost equal, take out the oranges. You add a little water and continue to slurry the sugar water until it becomes a thick paste and slightly yellowish, then lower the heat to low, add the oranges and gently stir to stick the sugar evenly on all sides.
Pick up the orange slices and put them on a rack / rack to dry in the sun for 2 days or put in the oven to dry for 4-5 hours at 70 degrees C. Store in glass jars or sealed packages. The syrup (remaining slug juice), you put it in a glass jar, use it to make a very delicious ginger tea.
