It is known by many international diners as a special dish that should be enjoyed when coming to Vietnam. But few people know that it has been associated with many classes in Vietnamese society.

From the early days of its appearance, Pho is a popular street food with working people. Pho is sold by street vendors. The seller carries two baskets, one end contains broth, and the other end contains noodles, meat, and herbs. After that, Pho gradually became popular and appeared in many places since the 1950s. 

Nowadays, pho is popular in Vietnam, from rural to urban areas, from the elderly to the young, and has become a pride of Vietnamese cuisine with friends around the world.

 

Pho is a symbol of family, community, and tradition

Pho is considered a rich flavor dish of Vietnamese cuisine. 

Pho first appeared in the early 20th century in the northern provinces of Vietnam. This results from borrowing cooking techniques and ingredients, combined with local culinary culture. Vietnamese chefs in the 20th century transformed French pot-au-feu and a Chinese noodle dish into Phở. Therefore, it is a combination of diverse flavors while reflecting the cultural breath of the times. The flavor of Pho is special thanks to the meticulous combination of ingredients.

The soul of pho is in the broth. Water is cooked traditionally, simmering from beef or chicken bones for many hours. Combined with aromatic spices such as star anise, cinnamon, cloves, coriander seeds, and cardamom it create a special richness and aroma. 

A delicious bowl of pho cannot be complete without Pho noodles. They are made from rice flour and have a soft, slightly chewy texture. Pho is usually soaked in boiling water before being put in a bowl.

The meat used for Pho is beef for Beef Noodle Soup (Phở Bò). Chicken noodle soup (Phở ga) will use shredded chicken.

To enhance the taste, add green onions and some herbs sprinkled on top. Diners can eat Pho with bean sprouts, lemon, fresh chili, or chili garlic vinegar.

Many different types of Pho with distinct characteristics

There are many different types of pho that diners can enjoy. The fact that there are many variations of this is due to the regional taste, and the creativity of the cook. 

Pho in the North originates from Hanoi,simple taste, light, clear broth, has a bar, and is less sweet than other types. This pho focuses on natural flavors, so the quality of fresh beef is the highlight.


Pho in the South is usually sweeter and richer. The broth is darker in color due to the addition of grilled shallots and a combination of spices. This pho is often served with bean sprouts, raw vegetables, sliced onions, garlic, and soy sauce.

In coastal areas, pho is sometimes prepared with seafood, offering a unique twist from the traditional version. Shrimp, fish, squid, or some kind of seafood are added to the broth, bringing out the salty and rich flavors of the ocean.


Currently, there is also a vegetarian pho, suitable for diners who are on a diet. Vegetarian Pho has a broth extracted from vegetables. The dish is a combination of many types of mushrooms, tofu, and vegetables. 

In addition to Beef Noodle Soup (Phở bò), there is also chicken noodle soup (Phở ga), the broth using chicken broth and has a rich taste. The chicken is boiled until tender and the broth is further soaked with ginger and a flavoring. Chicken noodle soup has a milder flavor and milder smell than beef noodle soup. 


In short, each regional variation of pho represents the traditions and culture of that region, showing the diversity of Vietnamese cuisine. Despite many unique changes and variations, pho is always a special dish, a symphony of flavors.
